01 - Whisk olive oil, lemon juice, lemon zest, garlic, parsley, thyme, oregano, salt, and black pepper together in a large bowl.
02 - Add chicken thighs to the marinade and turn to coat evenly. Cover and refrigerate for at least 1 hour or up to 8 hours for optimal flavor.
03 - Preheat grill to medium-high heat (approximately 400°F).
04 - Remove chicken from marinade and let excess drip off. Discard marinade.
05 - Place chicken thighs on the grill and cook 6 to 8 minutes per side until grill marks form and internal temperature reaches 165°F.
06 - Transfer chicken to a platter and allow to rest for 5 minutes before serving. Garnish with lemon wedges and additional parsley if desired.
