11 - 1 tablespoon olive oil
12 - 1 small garlic clove, minced

# Directions:

01 - Dice the cucumber and avocado into uniform pieces. Finely chop the romaine lettuce, thinly slice the green onions, and roughly chop the basil, chives, and parsley.
02 - In a large salad bowl, toss together the cucumber, avocado, romaine lettuce, green onions, basil, chives, and parsley until evenly distributed.
03 - In a separate mixing bowl, whisk together Greek yogurt, mayonnaise, lemon juice, olive oil, minced garlic, tarragon, dill if using, salt, and pepper until smooth and creamy.
04 - Pour the prepared dressing over the vegetable mixture. Gently toss to coat all ingredients, being careful not to mash the avocado pieces.
05 - Sprinkle crumbled feta cheese and toasted pumpkin seeds or sunflower seeds over the top if desired. Serve immediately while vegetables remain crisp.

# Expert Advice:

01 -
  • The dressing comes together in minutes but tastes like something from a fancy restaurant
  • It uses up all those fresh herbs that always seem to go bad in the fridge
02 -
  • The dressing tastes even better after sitting in the fridge for an hour
  • Add the dressing right before serving or the avocado will start to break down
03 -
  • Toast your seeds in a dry pan for 2 minutes until fragrant
  • Use a mezzaluna if you have one for perfectly chopped herbs
