Lemonade Scones

Lemonade Scones (3-Ingredient Recipe)

  • Author: Diane
  • Total Time: 20 minutes

Description

Lemonade Scones are the ultimate quick and easy treat—light, fluffy, and delicious, requiring only three simple ingredients! This no-fuss recipe creates perfectly golden scones with a soft, buttery interior, making them ideal for serving with jam and cream at breakfast, brunch, or afternoon tea.

What makes these scones special is the unexpected addition of lemonade—a secret ingredient that adds both sweetness and airiness to the dough. The carbonation in the lemonade helps create a beautifully soft texture, while the self-rising flour ensures a perfect rise without the need for additional leavening agents.

This recipe is fail-proof and beginner-friendly, making it perfect for anyone who wants to enjoy homemade scones without complicated techniques or long preparation times. Whether you’re hosting a high tea, treating your family, or simply craving a quick bake, these 3-ingredient Lemonade Scones will become your go-to recipe!

Ingredients

Scale
  • 3 cups (450g) self-rising flour
  • 1 cup (250ml) lemonade (not diet, must be fizzy)
  • 1 cup (250ml) heavy cream (or thickened cream)

Optional (for extra flavor & texture):

  • ½ teaspoon salt (enhances flavor)
  • 1 teaspoon vanilla extract (adds a subtle sweetness)
  • 1 tablespoon sugar (if you prefer sweeter scones)
  • Milk, for brushing tops (for a golden finish)

Instructions

Step 1: Preheat and Prepare

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or lightly grease a baking tray.

Step 2: Mix the Dough

  1. In a large mixing bowl, sift the self-rising flour to remove lumps.
  2. Make a well in the center and pour in the lemonade and heavy cream.
  3. Using a spatula or butter knife, gently mix the ingredients until they come together into a soft dough. Avoid over-mixing, as this can make the scones dense.

Step 3: Shape the Dough

  1. Lightly flour a clean surface and transfer the dough onto it.
  2. Gently knead just 2–3 times to bring the dough together. Do not overwork it!
  3. Pat the dough into a ¾-inch (2cm) thick disc.
  4. Using a round cutter (about 2.5 inches in diameter), cut out scones. Do not twist the cutter—just press straight down to allow them to rise evenly.
  5. Gather any leftover dough, reshape, and cut out more scones.

Step 4: Bake the Scones

  1. Place the scones close together (but not touching) on the prepared baking sheet.
  2. Lightly brush the tops with milk for a golden color.
  3. Bake in the preheated oven for 12–15 minutes, or until the scones are golden brown and puffed up.

Step 5: Cool and Serve

  1. Transfer the scones to a wire rack and let them cool slightly.
  2. Serve warm with butter, jam, and clotted cream for the best taste!

Notes

  • Use a sharp cutter: This ensures clean edges, allowing the scones to rise properly.
  • Don’t overwork the dough: The less you handle it, the lighter and fluffier your scones will be.
  • For extra fluffiness: Let the cut scones rest for 10 minutes before baking.
  • Scones are best enjoyed fresh! If storing, warm them slightly before serving.
