The Crispy Beef:

  • 500g (1 lb) beef sirloin or flank steak, thinly sliced
  • 3 tbsp cornstarch
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • Vegetable oil for frying

The Honey Soy Sauce:

  • 1/4 cup soy sauce (light or low-sodium)
  • 3 tbsp honey
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar or apple cider vinegar
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp oyster sauce (optional, for extra umami)
  • 1 tsp sesame oil
  • 1/2 tsp red pepper flakes (optional for heat)
  • 1 tbsp cornstarch + 2 tbsp water (to thicken)

The Noodles:

  • 250g (8 oz) egg noodles or rice noodles
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 1/2 cup carrot, julienned
  • 1/2 cup bell peppers, thinly sliced
  • 1/2 cup snap peas or green beans
  • 2 green onions, chopped
  • 1 tbsp sesame seeds (for garnish)

Instructions

1: Prepare the Beef

  1. Slice the beef into thin strips, ensuring they are evenly cut for quick frying.
  2. In a mixing bowl, toss the beef strips with soy sauce, garlic powder, salt, black pepper, and cornstarch. Mix well to coat each piece evenly. Let it marinate for 10–15 minutes while you prepare the sauce.

 2: Prepare the Honey Soy Sauce

  1. In a small saucepan over medium heat, combine soy sauce, honey, brown sugar, rice vinegar, oyster sauce (if using), garlic, ginger, sesame oil, and red pepper flakes.
  2. Stir the ingredients together and bring to a gentle simmer.
  3. In a small bowl, mix 1 tbsp cornstarch with 2 tbsp water to form a slurry.
  4. Gradually add the cornstarch mixture to the sauce while stirring continuously to prevent lumps.
  5. Allow the sauce to thicken for 1–2 minutes, then remove it from heat and set it aside.

 3: Cook the Noodles

  1. Boil water in a large pot and cook the noodles according to the package instructions.
  2. Drain the noodles and toss them with 1 tbsp soy sauce and 1 tbsp sesame oil to prevent sticking. Set aside.

 4: Fry the Crispy Beef

  1. Heat vegetable oil in a deep pan or wok over medium-high heat (about 180°C/350°F).
  2. Carefully drop the marinated beef strips into the hot oil in small batches, ensuring they don’t clump together.
  3. Fry for about 2–3 minutes or until golden brown and crispy.
  4. Remove and drain on a paper towel-lined plate. Repeat until all the beef is fried.

 5: Stir-Fry and Combine Everything

  1. In a large wok or skillet, heat 1 tbsp vegetable oil over medium-high heat.
  2. Add julienned carrots, bell peppers, and snap peas. Stir-fry for 2 minutes until slightly tender but still crisp.
  3. Add the cooked noodles to the pan and toss to combine with the vegetables.
  4. Pour the prepared honey soy sauce over the noodles and stir well to coat everything evenly.
  5. Finally, add the crispy beef and toss gently, ensuring the beef remains crunchy.
  6. Garnish with chopped green onions and sesame seeds before serving.
