This dessert is simple to make, requires minimal ingredients, and is perfect for breakfast, brunch, or dessert. The rich, creamy custard pairs wonderfully with the slightly tart burst of blackberries, creating an irresistible flavor. It’s best enjoyed warm, dusted with powdered sugar, and can be served with whipped cream, ice cream, or a drizzle of honey.

The Clafoutis Batter:

  • 1 cup (240ml) whole milk
  • ½ cup (120ml) heavy cream (for extra richness, optional)
  • 3 large eggs
  • ½ cup (100g) granulated sugar
  • ½ cup (60g) all-purpose flour
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional, enhances the fruit flavor)
  • ⅛ teaspoon salt
  • 1 tablespoon unsalted butter (for greasing the pan)

The Fruit Filling:

  • 1 ½ cups (225g) fresh blackberries (or frozen, thawed and drained)
  • 1 tablespoon granulated sugar (to enhance sweetness)
  • 1 teaspoon lemon zest (optional, adds brightness)

Serving:

  • Powdered sugar (for dusting)
  • Whipped cream or vanilla ice cream (optional)

Instructions

 1: Preheat the Oven & Prepare the Dish

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a 9-inch (23cm) baking dish or cast-iron skillet with butter.

 2: Prepare the Blackberries

  1. Wash and dry the blackberries thoroughly. If using frozen blackberries, make sure they are thawed and well-drained.
  2. Toss them with 1 tablespoon of sugar and lemon zest to enhance their flavor.
  3. Spread the blackberries evenly in the prepared baking dish.

 3: Make the Batter

  1. In a large mixing bowl, whisk together the eggs and sugar until smooth and pale.
  2. Add the vanilla extract, almond extract (if using), salt, and flour. Whisk until fully combined.
  3. Gradually pour in the milk and heavy cream, whisking continuously to create a smooth batter.

 4: Assemble the Clafoutis

  1. Slowly pour the batter over the blackberries in the baking dish. The berries may float slightly.
  2. Give the dish a gentle shake to ensure the batter settles evenly.

 5: Bake the Clafoutis

  1. Place the dish in the preheated oven and bake for 35–40 minutes, or until the clafoutis is golden brown and set in the center.
  2. To check for doneness, insert a toothpick in the middle—if it comes out clean, it’s ready!
  3. Remove from the oven and let it cool for 10–15 minutes before serving.

Notes

  • Don’t overbake: The center should be just set but slightly jiggly—it will firm up as it cools.
  • Use room temperature ingredients: This ensures a smooth, evenly baked custard.
  • If using frozen blackberries: Thaw completely and drain excess liquid to prevent the batter from becoming too watery.
  • For extra crisp edges: Sprinkle a little granulated sugar on top before baking.
